MARIO TORELLI (Piedmont Italy)
Mario and his son, Gianfranco must have the strength of 10 men since their vineyards are so difficult to farm on these ultra-steep slopes. It is worth the toil however, as this 7ha plot (270-350m high) in Bubbio is ideally situated on precious marne soils, among a stunning natural environment. The two are careful to preserve the natural equilibrium, which has kept their Barbera, Dolcetto, Moscato and Chardonnay vines healthy for so long. Although there are 4 generations of winemaking history here, it was in 1987 when they decided to bridge into totally natural production methods. They still work in the 19th century stone farmhouse but have modernized it with a precise rain-water drainage system, keeping even the water in balance on the land. They understand that the care taken, from the vine to the cellar to the person drinking their wine is important, presenting the benefits that only natural winemaking can offer.
Dolcetto d’ÄôAsti "Bricco Rocchetto" 2007

100% Dolcetto picked in mid-September 45hL/ha from 10yr old vines. All destemmed and soaked, cold for 2 days before natural yeasts kickstart fermentation in cuve. Pumped over 8 times. Aged in steel tank until following summer, bottled and released 1 month later.
